Gluten-Free Oatmeal Chocolate Chip Cookies

Try these delicious Gluten Free Chocolate Chip Cookies using brown rice flour.

Ingredients :
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1/2 cup light brown sugar
  • 2 large eggs, room temperature
  • 1 Tbsp pure vanilla extract
  • 1 1/2 cups fresh brown rice flour, ground fine
  • 1/2 cup potato starch (not potato flour)
  • 1/4 cup tapioca flour
  • 1 tsp xanthan gum
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 1 1/2 cups gluten free oats
  • 2 cups chocolate chips
  • 1 cup chopped nuts, optional
Instructions :

  1. Mix flours, potato starch, xanthan gum, salt, and baking soda in a large bowl. Set aside.
  2. Using the cookie paddles, cream softened butter and white sugar for 2 minutes on speed 2.
  3. Add brown sugar. Beat another 2 minutes.
  4. Add eggs one at a time while mixing until incorporated. Add vanilla. Beat another 30 seconds.
  5. Add flour mixture. Pulse BOSCH using M switch a few times until combined.
  6. Add, chocolate chips, oatmeal and nuts (optional). Pulse a few more times. Do not overmix.
  7. Chill dough for 20-30 minutes. Using a cookie scoop, drop dough 2" apart on a parchment-lined cookie sheet.
  8. Bake for 8-11 minutes or until golden brown. Cool on a wire rack.
NOTE: Dough freezes well. Drop balls of dough close together on a cookie sheet. Freeze then transfer to freezer bags.
To bake, place balls of frozen dough on a parchment-lined cookie sheet. Bake at 375. Bake approximately 8 minutes or until golden brown.
