Cinnamon Streusel Breakfast Cake (Whole Grain)

Who says you can’t eat cake for breakfast? You can, when it’s made with nutritious whole grain flour! Prepare the topping and mix the dry ingredients the night before to save time in the morning. This is a moist, lightly sweet cake, perfect for a coffee break or an after-school snack.

Ingredients :


  • 1 1/2 cups freshly ground whole wheat flour
  • 1/4 tsp RealSalt or sea salt
  • 2 1/2 tsp baking powder
  • 2 tsp fresh orange zest, optional
  • 1 large egg, beaten
  • 3 Tbsp honey or 1/4 cup granulated sugar
  • 3/4 cup whole milk
  • 3 Tbsp melted butter or oil
  • 1 1/2 tsp vanilla extract


  • 1/4 cup honey or brown sugar
  • 1 Tbsp whole wheat flour
  • 1 tsp cinnamon
  • 1 Tbsp melted butter or oil
  • 1/4 cup chopped nuts
Instructions :

Preheat oven to 350F. Prepare the topping by mixing sugar, flour, cinnamon, and butter or oil in a small bowl. Set aside. In a medium mixing bowl, stir together the flour, salt, baking powder, and optional zest. Add the beaten egg, honey or sugar, milk, butter, and vanilla. Stir until thoroughly combined but do not over mix. Pour the batter into a greased 8x8" baking pan. Sprinkle the topping mixture over the batter. Bake for 25-30 minutes or until cake springs back when lightly touched.
