Whole Wheat Pumpkin Bread

Pumpkin bread is the perfect food for fall.

Ingredients :

2 cups fresh whole wheat flour
1 Tbsp pumpkin pie spice
1/2 tsp salt
1 Tbsp baking powder
2 eggs
1 cup sugar
1/2 cup oil
1 - 15 oz can pumpkin
1/2 cup chopped walnuts or pecans, optional

Instructions :

In a medium mixing bowl, stir together dry ingredients. In a separate bowl, beat eggs, oil, sugar, and pumpkin. Fold the egg mixture into the dry ingredients until combined. Do not over mix. Fold in nuts, if desired. Pour batter into a greased 9" x 5" loaf pan. Bake in a preheated 350° F oven for 55-65 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
